Luke Spencer of Spencer Cocoa clearly has a very strong relationship with the families in Vanuatu who produce his cacao. With a background in viticulture, he spent time living in Vanuatu and managing a large cacao plantation, so he knows the whole chocolate process from start to finish.
Now based in Mudgee, New South Wales, he makes small batches of exceptional bean-to-bar chocolate in his tiny, self-engineered factory with his wife, Thea. Twice a year he visits the families who produce his cacao and feels equally at home amongst the people of Malekula, Vanuatu as he does in his native land of Australia.
