Zokoko Chocolate is made by Michelle Morgan in the foothills of the Blue Mountains in Sydney, New South Wales. Having launched in 2012, Michelle was one of the first craft chocolate makers in Australia and her chocolate is some of the best you will find over there. Something that everybody notices about Zokoko is the incredibly smooth texture of the chocolate, which is partly achieved through the use of a huge, vintage Lehmann melangeur. The melangeur crushes the cacao nibs between giant granite rollers in order to release their natural cocoa butter. It's very rare to see an old machine like this being used today and it's indicative of Michelle's dedication to using traditional artisan techniques.
