The cocoa beans for this organic milk chocolate bar originate from the Piura region of northern Peru. They give the creamy, caramel chocolate a fresh acidic aftertaste.
The first time Morin bought Peruvian cocoa beans, in 2002, it was only a few bags. They discovered the remarkable quality and developed a keen interest in cocoa from other Peruvian regions. In 2004 everything came together, as Morin started working with a French-Peruvian couple who conduct direct trade with the producers in Peru, creating the all-important short chains and transparency.
The cocoa used to create bar is grown in the Piura region, in the north of Peru. The area needs light irrigation. Years ago, the cocoa farmers in the area went on a study trip to Chuao, Venezuela, where very aromatic cocoa is produced. Since that trip, these Peruvian farmers have been growing and processing their beans in the same way as in Chuao. They are organically certified and the trees are of the Criollo variety, with approximately 35% very light-coloured beans (known as Porcelana).
