Blend. The Somia plantation cultivates cacao which is 80% Trinitario, 10% Criollo and 10% Forastero, with a flavour directly representative of Madagascar's terroir.
Bahen & Co, based in West Australia, take a traditional approach by stone grinding their chocolate from bean to bar using vintage chocolate machines which operate slow and cool, preserving the taste of distant places.
