It’s what causes caramelisation, and when cacao beans are roasted it reduces the acidity and deepens the flavour. Not roasting cacao removes some of the flavour control for chocolate makers, which is why some people in the industry are opposed to it, but we think it’s great to experiment with new and different techniques.
