LIM Chocolate Gran Nativo Blanco 70%

This 70% dark chocolate bar is made with Gran Nativo Blanco aka 'Piura Blanco', the rare white cacao bean from the Piura region of Peru that has become highly sought after, and brings mango and passionfruit to the palate, with subtle notes of caramel developing throughout.

This bar took Bronze at both the Academy of Chocolate Awards 2021 and the European International Chocolate Awards 2021-2022.

Fine aroma cacao, elegant and refined, which has a high percentage of extremely precious and rare white beans. Hidden for over a century, this gem was rediscovered in 2008 on the small cocoa fields from San Juan de Bigotes, in Piura, in the north of Peru. Small-scale cocoa farmers in the region have identified the best cocoa trees and reintroduced this ancient cocoa variety.

Today Gran Nativo Blanco is Peru's most awarded cocoa and is recognized for its delicate flavors, aromas and fragrances. This cocoa is dried in the sun, fermented for 5-6 days on wood covered with banana leaves.

Prior to becoming a craft chocolate maker, Federico was a pharmaceutical chemist for over a decade. LIM Chocolate bars have an ever-so-slightly rougher mouthfeel, though not at all unpleasant, and after trying different bars by this maker we can clearly tell that it's entirely by-design. LIM Chocolate do manage to draw out some wonderful characteristics from the cacao beans they use.
