This wonderful Balinese cacao 76% dark chocolate offers a deep and sweet cocoa flavour, with notes of cherry jam, wild honey and sandalwood coming through.
Roasting was done with a very light process, at low temperature for medium duration. The result is balanced, with a prevalence of sweetness, hints of cherries and sandalwood.
The cocoa butter improves its texture and allows for greater melt, enveloping the entire palate. Refining on stone for at least 24 hours has allowed complete aromatic development.
