The mulberry is the epitome of a flavour berry with potency in droves, and being unrivalled in sharpness and sweetness. Added to this milk chocolate at a high percentage, the result is sharp milk chocolate, unapologetically bursting with mulberry, and notes of cream and malt.
Mulberries are not grown commercially in New Zealand and they are very difficult to harvest. Chocolate maker Johnty Tatham picked these berries by hand from his family's own tree on their farm - picking daily throughout the season in order to gather only the ripest berries. Johnty tells us that he will climb the tree and drop the mulberries down to his brother who will be waiting bellow to catch the berries and place them in a bucket. The mulberries are then freeze-dried by Food Nerd in Wellington.
The resulting bar is part of Lucid Chocolatier's Finite Collection as batches are not only small but seasonal and harvest dependent.

Secluded from the modern world and using traditional farming practices, they produce some of the world's finest organic cacao. Their operation is symbiotic with the rainforest, and its unique biodiversity gives the cacao its distinctive flavour.
