A bright and delicate 73% dark chocolate made with cacao from the Soconusco region of Mexico. We tasted notes of green apple and caramel, along with subtle floral hints and a light nuttiness.

Taylor Kennedy at Sirene has been working with these beans for the past three years, and he thinks this latest harvest is the best yet. The beans are sourced from a cooperative named Organización de Productores de Cacao Sostenible Rayén - a small group of farmers who are working incredibly hard to preserve ancient heirloom cacao varietals from the Soconusco region of southern Mexico. As with a lot of flora these days, rare cacao genetics are dying out every year, and with each one we lose some of nature’s incredible diversity, as well as a wealth of potential deliciousness. With the climate rapidly changing, it seems common sense that we should preserve as many strains of cacao as possible, to give future generations the best possible chance of enjoying chocolate. We don’t know how cacao will react to changing weather and landscapes, and one of these rare varietals could hold the key to survival. 

Sirene carefully select farms growing exceptional cacao beans for their craft chocolate factory in Victoria, Canada, where they are sorted, roasted, winnowed, ground, aged and molded by hand.

Shipping Info

Shipping costs between $3.50 and $5.90 within New Zealand (except for rural). We use PBT couriers within New Zealand and aim for next day delivery on the North Island and 48 hour delivery for the South Island, though occasionally things can take two or three days longer than this. Rural deliveries can take up to six working days, though usually it is faster.

For international deliveries we use DHL. Costs and times vary depending on location and volume of purchase. All details provided at the checkout.
