Andrew Shepherd’s Vancouver Island Salt Company uses pure seawater from Canada’s wild west coast to handcraft a range of artisanal salts. The Costa Esmeraldas Plantation in Ecuador is not far from the sea, which might explain why this cacao marries so well with the essence of ocean waters.
A fudgey, nutty and chocolatey 73% bar with subtle and delightful specks of sea salt. One of our all-time favourite bars.
Sirene carefully select farms growing exceptional cacao beans for their craft chocolate factory in Victoria, Canada, where they are sorted, roasted, winnowed, ground, aged and molded by hand.

Freddy Salazar's farm Costa Esmeraldas, 6 miles off the coast in NW Ecuador's Cloud Forests.
Freddy Salazar’s estate in the Cloud Forest of Costa Esmeraldas is situated on an ex-cattle ranch. Very steep, lush, layered slopes complicate the daily work but the year round climate stays quite stable with a short wet season and misty, drizzly summers in the aptly named Cloud Forests. Minimal temperature fluctuation means consistency is more achievable. Management of the cocoa orchards creates over 40 full-time jobs in the local community of rural Esmeraldas.
